⏱️ Prep Time: 20 minutes | Cook Time: 10 minutes
🍽️ Servings: 10 mini tacos
Ingredients:
For the Taco Shells:
10 small flour tortillas
1/2 cup granulated sugar
1 tsp ground cinnamon
1/2 cup melted butter
For the Cheesecake Filling:
8 oz cream cheese, softened
1 cup heavy whipping cream
1/2 cup powdered sugar
1 tsp vanilla extract
For the Strawberry Crunch Topping:
20 golden Oreos, crushed
1 box strawberry Jell-O powder (3 oz)
1/4 cup melted butter
For Garnish:
Fresh strawberries, diced
Whipped cream
Mint leaves (optional)
Instructions:
1. Make the taco shells:
Preheat oven to 375°F (190°C). Cut tortillas into circles using a large cookie cutter. Brush each side with melted butter, then dip in a cinnamon-sugar mix. Drape the tortillas over the bars of an upside-down muffin tin to form taco shapes. Bake for 8–10 minutes or until golden and crisp. Let cool completely.
2. Prepare the strawberry crunch topping:
In a bowl, combine crushed golden Oreos, strawberry Jell-O powder, and melted butter. Stir until crumbly and set aside. This creates that irresistible sweet “crunch” layer!
3. Whip up the cheesecake filling:
Beat cream cheese until smooth. In another bowl, whip heavy cream, powdered sugar, and vanilla until stiff peaks form. Fold the whipped cream into the cream cheese to create a light and fluffy cheesecake mixture.
4. Assemble the tacos:
Spoon or pipe cheesecake filling into each taco shell. Sprinkle generously with strawberry crunch topping. Add diced fresh strawberries for extra juiciness.
5. Garnish & serve:
Top with whipped cream, a drizzle of strawberry syrup (optional), and a fresh mint leaf for a bakery-style finish.
Tips & Variations:
✅ Use chocolate Oreos instead of golden for a chocolate-strawberry twist.
✅ Make ahead: Prepare taco shells and filling separately, then assemble before serving for maximum crunch.
✅ Try different Jell-O flavors like raspberry or cherry for fun variations.
✅ For extra indulgence, dip taco shell edges in white chocolate before filling.
