🍽️ A juicy, flavor-packed chicken breast stuffed with creamy spinach, roasted red peppers, and melty cheese — this recipe is your ticket to a restaurant-worthy dinner at home! Perfectly seared, then baked to golden perfection. A showstopper dish that’s as easy to make as it is impressive! ❤️🔥🧄
Ingredients:
4 boneless, skinless chicken breasts
1 tbsp olive oil
1 tsp garlic powder
1 tsp onion powder
½ tsp smoked paprika
½ tsp salt
½ tsp black pepper
½ tsp Italian seasoning
Toothpicks or kitchen twine (for securing)
For the Filling:
1 tbsp olive oil
3 cups fresh spinach, chopped
2 cloves garlic, minced
½ cup roasted red peppers, sliced
½ cup cream cheese, softened
¼ cup grated Parmesan cheese
½ cup shredded mozzarella cheese
Salt and pepper, to taste
Instructions:
Prepare the Filling:
In a skillet over medium heat, add 1 tablespoon olive oil. Sauté the garlic until fragrant, about 30 seconds. Add chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat and stir in roasted red peppers, cream cheese, Parmesan, and mozzarella. Season with salt and pepper to taste. Mix until creamy and well combined. Let the filling cool slightly.
Butterfly the Chicken:
Carefully slice each chicken breast horizontally to create a pocket, being careful not to cut all the way through. Open each piece like a book. Season both sides of the chicken with garlic powder, onion powder, smoked paprika, salt, pepper, and Italian seasoning.
Stuff the Chicken:
Spoon an even amount of the filling into each chicken breast. Fold the top flap of the chicken over the filling and secure with toothpicks or kitchen twine to keep everything in place during cooking.
Sear the Chicken:
Preheat oven to 375°F (190°C). In a large oven-safe skillet, heat 1 tablespoon of olive oil over medium-high heat. Carefully place the stuffed chicken breasts in the skillet and sear each side for 2-3 minutes, or until golden brown.
Bake to Perfection:
Transfer the skillet to the preheated oven and bake for 18–22 minutes, or until the chicken is fully cooked through (internal temperature should reach 165°F or 74°C).
Serve:
Let the chicken rest for 5 minutes before slicing. Serve whole or cut into medallions to show off the beautiful filling. This dish pairs perfectly with mashed potatoes, garlic green beans, or a fresh salad.
