Ingredients:
For the Crust:
1½ cups graham cracker crumbs
¼ cup granulated sugar
6 tbsp unsalted butter, melted
For the Filling:
1 (3.4 oz) box instant banana pudding mix
1½ cups cold whole milk
½ cup heavy cream
1 cup whipped topping or homemade whipped cream
For Assembly:
2 ripe bananas, sliced
Whipped cream, for topping
Crushed graham crackers or cookie crumbs, for garnish (optional)
Mini pie tins, muffin tin, or ramekins
Instructions:
1. Make the Crust:
In a mixing bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until the crumbs are evenly coated and the mixture resembles wet sand.
Press about 2 tablespoons of the crumb mixture into the bottoms and up the sides of mini pie tins or muffin cups to form the crusts. Use the back of a spoon to pack them down firmly. Place them in the freezer for at least 15 minutes to set.
2. Prepare the Banana Filling:
In a large bowl, whisk together the instant banana pudding mix and cold milk until smooth. Let the mixture sit for 5 minutes to thicken.
In a separate bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the banana pudding mixture, followed by the whipped topping, until light and fluffy.
3. Assemble the Mini Pies:
Remove the crusts from the freezer. Place a few banana slices into the bottom of each mini crust. Spoon or pipe the banana cream filling over the bananas, filling each pie to the top.
4. Chill:
Refrigerate the mini pies for at least 1 hour, or until set. This helps the flavors meld and the filling firm up.
5. Garnish and Serve:
Before serving, top each mini pie with a swirl of whipped cream and a sprinkle of crushed graham crackers or cookie crumbs for extra texture and charm. Add a banana slice or two for decoration if desired.
