Ingredients:
For the Base:
1 lb (450g) ground beef
1 medium onion, diced
2 cloves garlic, minced
Salt & black pepper, to taste
1 teaspoon paprika
½ teaspoon dried thyme or Italian seasoning
For the Layers:
4 medium potatoes, thinly sliced
2 medium carrots, thinly sliced (optional)
1 can (10.5 oz) cream of mushroom soup
½ cup milk
1 cup frozen mixed vegetables (peas, corn, green beans, optional)
1½ cups shredded cheddar cheese
For Garnish (Optional):
Fresh parsley, chopped
Green onions, sliced
Instructions:
1. Cook the beef mixture:
In a large skillet, cook the ground beef, onion, and garlic over medium heat until the meat is browned and the onions are soft. Drain any excess fat. Season with salt, pepper, paprika, and thyme.
2. Prepare the sauce:
In a small bowl, whisk together the cream of mushroom soup and milk until smooth. This will act as the creamy binder for the casserole.
3. Layer the casserole:
Grease a 9×13-inch baking dish. Start with a layer of potato slices at the bottom, followed by carrots (if using). Spread half of the beef mixture over the vegetables. Pour half of the soup mixture on top, then sprinkle with a little shredded cheese. Repeat the layers, ending with soup mixture and cheese on top.
4. Bake it to golden perfection:
Cover with foil and bake in a preheated oven at 375°F (190°C) for about 45 minutes. Remove foil and bake another 15–20 minutes, until the potatoes are tender and the cheese is melted and bubbly.
