🛒 Ingredients
1 lb ground turkey

2 medium sweet potatoes, peeled and diced

1 tbsp olive oil

1 onion, chopped

2 cloves garlic, minced

1 bell pepper, chopped

1 tsp smoked paprika

1 tsp cumin

Salt and pepper, to taste

2 cups spinach, chopped

Fresh parsley, for garnish

1. Heat It Up
Heat olive oil in a large skillet over medium heat.

2. Sauté the Aromatics
Add the chopped onion and minced garlic. Sauté for 2–3 minutes until fragrant and softened.

3. Cook the Sweet Potatoes
Add the diced sweet potatoes. Cook for about 10 minutes, stirring occasionally, until they begin to soften.

4. Brown the Turkey
Add ground turkey to the skillet, breaking it up with a spoon. Cook for 5–7 minutes, or until fully browned.

5. Season and Add Veggies
Stir in smoked paprika, cumin, salt, and pepper. Mix in chopped bell pepper and spinach. Cook for another 3–4 minutes, until veggies are tender and spinach is wilted.

6. Finish and Serve
Remove from heat. Sprinkle with fresh parsley and serve warm.
