Ingredients:
For the Marinade:
2 lbs (900g) boneless, skinless chicken breasts or thighs, cut into 1-inch cubes
1/2 cup ranch dressing (or 1 packet dry ranch seasoning + 1/4 cup olive oil)
3 cloves garlic, minced
1/3 cup grated Parmesan cheese
2 tbsp olive oil
1 tbsp lemon juice
1 tsp smoked paprika
1/2 tsp black pepper
1/2 tsp salt (adjust to taste)
2 tbsp fresh parsley, chopped

Instructions:
1. Prep the chicken:
Cut the chicken into evenly sized cubes (about 1 inch) to ensure they cook evenly.
2. Make the marinade:
In a large bowl, combine ranch dressing, minced garlic, Parmesan, olive oil, lemon juice, paprika, salt, and pepper. Mix until creamy and well-blended.
3. Marinate:
Add chicken cubes to the marinade, tossing to coat well. Cover and refrigerate for at least 30 minutes (up to 4 hours for maximum flavor).
4. Assemble skewers:
Thread the marinated chicken pieces onto skewers. If using wooden skewers, soak them in water for 20–30 minutes beforehand to prevent burning.
