Ingredients:
For the Filling:

1 lb (450g) ground beef

1 small onion, diced

2 cloves garlic, minced

1 packet taco seasoning (or 2 tbsp homemade)

1 can (10 oz) diced tomatoes with green chilies (optional for heat)

1 cup black beans, drained and rinsed (optional)

1 cup shredded cheddar or Mexican blend cheese

For the Enchiladas:

8–10 medium flour or corn tortillas

2 cups enchilada sauce (red or green)

2 cups shredded cheese (cheddar, Monterey Jack, or Mexican blend)

Fresh cilantro, chopped (for garnish)

For Serving:

Sour cream

Sliced avocado

Lime wedges

Instructions:
1. Prepare the filling:
In a large skillet over medium heat, cook ground beef until browned, breaking it apart with a spoon. Drain excess fat. Add diced onion and garlic, cooking for 2–3 minutes until softened. Stir in taco seasoning, diced tomatoes (if using), and black beans. Simmer for 5 minutes to let flavors meld. Remove from heat and stir in 1 cup shredded cheese.

2. Preheat the oven:
Set your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.

3. Assemble the enchiladas:
Spread a thin layer of enchilada sauce on the bottom of the baking dish. Spoon the beef mixture into the center of each tortilla, roll it up tightly, and place seam-side down in the dish.

4. Add sauce & cheese:
Pour remaining enchilada sauce evenly over the rolled tortillas. Sprinkle the 2 cups of shredded cheese generously over the top.

5. Bake to perfection:
Cover with foil and bake for 20 minutes. Remove foil and bake an additional 8–10 minutes until cheese is fully melted and bubbly.

6. Garnish & serve:
Top with fresh cilantro and serve hot with sour cream, avocado slices, and lime wedges.

Tips & Variations:
✅ Use ground turkey or shredded chicken instead of beef.
✅ Add sautéed bell peppers or jalapeños for extra flavor.
✅ Make ahead and freeze — just thaw before baking.
✅ Try green enchilada sauce for a fresh, tangy twist.
