Ingredients:
For the Crispy Chicken:
2 large chicken breasts, sliced in half lengthwise
1 cup buttermilk (or regular milk + 1 tsp lemon juice)
1 cup all-purpose flour
1 cup breadcrumbs (panko for extra crunch)
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
1/2 tsp salt & black pepper
Oil, for frying
For the Sandwich:
4 sandwich rolls or ciabatta buns
1/2 cup Caesar dressing (homemade or store-bought)
2 cups romaine lettuce, shredded
1/4 cup freshly grated Parmesan cheese
Optional: sliced tomatoes, crispy bacon, or pickles
Instructions:
1. Marinate the chicken:
Place chicken breast halves in a bowl and cover with buttermilk. Let marinate for at least 30 minutes (or overnight for extra juiciness).
2. Prepare the coating:
In a shallow dish, mix flour, breadcrumbs, garlic powder, onion powder, paprika, salt, and pepper.
3. Fry the chicken:
Heat oil in a skillet over medium-high heat. Remove chicken from buttermilk, dredge in the flour-breadcrumb mixture, and fry until golden brown and crispy on both sides (about 4–5 minutes per side). Place on paper towels to drain.
4. Toast the buns:
Lightly butter your sandwich rolls and toast them in a skillet or oven until golden and crisp.
5. Build the sandwich:
Spread Caesar dressing on the bottom bun. Layer crispy chicken on top, then add shredded romaine, Parmesan cheese, and optional toppings. Finish with more Caesar dressing and the top bun.
