Ingredients:

For the Salad Base:

8 oz elbow macaroni (about 2 cups dry pasta)

6 large hard-boiled eggs, peeled and chopped

1 cup celery, finely diced

½ cup red onion, finely diced

½ cup sweet pickles or relish

2 tablespoons fresh parsley, chopped (optional for freshness)

For the Creamy Dressing:

1 cup mayonnaise

2 tablespoons yellow mustard (or Dijon for extra tang)

2 teaspoons apple cider vinegar

1 teaspoon sugar

½ teaspoon garlic powder

½ teaspoon paprika

Salt & black pepper, to taste

For Garnish:

Extra paprika

Fresh parsley or chives

Instructions:

1. Cook the pasta:
Bring a large pot of salted water to a boil. Cook the elbow macaroni according to package directions until al dente. Drain, rinse under cold water, and set aside to cool completely.

2. Prepare the eggs:
Peel and chop hard-boiled eggs into bite-sized pieces. For a deviled-egg twist, you can mash 2 yolks into the dressing for extra creaminess.

3. Make the dressing:
In a large mixing bowl, whisk together mayonnaise, mustard, apple cider vinegar, sugar, garlic powder, paprika, salt, and pepper until smooth and creamy.

4. Assemble the salad:
Add cooled macaroni, chopped eggs, celery, red onion, and pickles to the bowl of dressing. Toss everything gently until evenly coated.

5. Chill & set:
Cover the salad and refrigerate for at least 1–2 hours (or overnight) to let the flavors meld and the dressing thicken.

6. Garnish & serve:
Before serving, sprinkle with extra paprika and fresh parsley or chives for a pop of color. Serve chilled and enjoy!

Tips & Variations:

✅ Swap yellow mustard with spicy brown or Dijon for a deeper flavor.
✅ Add bacon bits for smoky crunch.
✅ For a lighter version, replace half the mayo with Greek yogurt.
✅ Make it ahead — it tastes even better the next day!
