Salt & black pepper, to taste

For the Sandwich:

4 slices of thick bread (sourdough, ciabatta, or multigrain work best)

1 ripe avocado, mashed or sliced

4 slices of cheese (cheddar, mozzarella, provolone, or pepper jack)

2 slices of tomato

1/4 small red onion, thinly sliced (optional)

Handful of fresh spinach or lettuce leaves

2 tbsp mayonnaise or ranch dressing

2 tbsp butter (for grilling bread)

Instructions:

1. Prepare the chicken:
Season the cooked chicken with olive oil, garlic powder, salt, and pepper for extra flavor. Slice thinly so it layers well in the sandwich.

2. Prep the bread:
Butter one side of each bread slice. Spread mayonnaise or ranch on the other side for a creamy base.

3. Build the sandwich:
On one slice of bread (buttered side facing out), layer chicken slices, mashed or sliced avocado, tomato, onion (if using), fresh spinach, and cheese. Top with another slice of bread, buttered side facing out.
