🍽️ Servings: 6–8

Ingredients:

For the Casserole:

1 lb (450g) ground beef

1 medium onion, finely diced

2 cloves garlic, minced

1 cup uncooked long-grain rice (white or brown)

2 cups beef broth (or chicken broth)

1 can (10.5 oz) cream of mushroom soup (or cream of chicken)

1 can (10 oz) diced tomatoes with green chilies (optional for spice)

1 cup frozen peas or mixed vegetables

1 teaspoon Worcestershire sauce

1 teaspoon paprika

Salt & black pepper, to taste

For the Cheesy Topping:

2 cups shredded cheddar cheese (or a blend of cheddar & mozzarella)

½ teaspoon dried parsley (optional, for garnish)

Instructions:

1. Cook the beef:
In a large skillet over medium heat, cook the ground beef until browned. Drain any excess fat. Add diced onion and garlic, cooking for 2–3 minutes until fragrant and softened.

2. Mix in the flavors:
Stir in Worcestershire sauce, paprika, salt, and pepper. Add the cream of mushroom soup, diced tomatoes (if using), and broth. Mix well to combine into a creamy base.

3. Add rice & veggies:
Stir in the uncooked rice and frozen vegetables. Let the mixture simmer for about 5 minutes, just to allow the flavors to come together.

4. Transfer to casserole dish:
Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish and pour the beef-rice mixture into it, spreading evenly.

5. Bake:
Cover with foil and bake for 40–45 minutes, or until the rice is fully cooked and tender.

6. Add the cheesy topping:
Remove the foil, sprinkle the shredded cheese generously over the casserole, and bake uncovered for another 10 minutes until the cheese is melted and bubbly.

7. Serve:
Let the casserole rest for 5 minutes before serving. Sprinkle with parsley for garnish if desired.
