Cheesy Ground Beef and Rice Casserole 🍚🥩
This comforting and hearty casserole combines ground beef, creamy rice, and melted cheddar cheese, making it a perfect family meal that’s easy to whip up on busy nights!
Ingredients:
1 lb ground beef
1 onion, diced
2 cloves garlic, minced
1 cup uncooked long-grain white rice 🍚
2 cups beef broth
1 can (14.5 oz) diced tomatoes, drained 🍅
1 tsp Italian seasoning 🌿
Salt and pepper, to taste 🧂🌶️
2 cups shredded cheddar cheese 🧀
1/2 cup sour cream
Instructions:
1️⃣ Prep the Oven:
Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
2️⃣ Cook the Beef Mixture:
In a large skillet over medium heat, cook the ground beef, onion, and garlic until the beef is browned and fully cooked.
Drain any excess fat.
3️⃣ Add Rice and Liquid:
Stir in the rice, beef broth, diced tomatoes, Italian seasoning, and season with salt and pepper.
Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 15-20 minutes, until the rice is tender and most of the liquid is absorbed.
4️⃣ Mix in Creaminess:
Remove the skillet from heat and gently stir in the sour cream and 1 cup of shredded cheddar cheese until combined.
5️⃣ Assemble the Casserole:
Transfer the beef and rice mixture into the prepared baking dish.
Sprinkle the remaining cheddar cheese evenly on top.
6️⃣ Bake:
Bake in the preheated oven for 25-30 minutes, or until the cheese on top is melted and bubbly.
7️⃣ Serve:
Allow the casserole to cool slightly before serving. Enjoy warm for a cozy, cheesy meal!
Optional Variations:
Veggie Boost: Add diced bell peppers, mushrooms, or frozen peas for extra nutrition.
Spicy Twist: Mix in a pinch of cayenne pepper or red chili flakes for a kick.
Taco Style: Substitute Italian seasoning with taco seasoning and use Monterey Jack cheese.
This casserole is not only satisfying but also a hit for any dinner table—perfect for leftovers (if there are any)! 🧀🍴
