Cheesy Bacon Mushroom Meatloaf
A rich and savory twist on a classic comfort food—this meatloaf is ultra-moist, layered with Swiss cheese, and topped with smoky bacon and sautéed mushrooms. Cozy, cheesy, and totally crave-worthy!

🛒 Ingredients
1 lb ground beef (80/20 for juiciness)
½ cup breadcrumbs
¼ cup milk
1 large egg
½ cup onion, finely chopped
2 cloves garlic, minced
1 cup mushrooms, chopped (plus extra for topping)
1 tsp Worcestershire sauce
1 tsp Dijon mustard
Salt and pepper, to taste
4–6 slices Swiss cheese
4 slices bacon
Optional garnish: fresh thyme or chopped parsley
👩‍🍳 Instructions
1️⃣ Make the Panade
In a small bowl, combine breadcrumbs and milk. Let sit for 5 minutes until softened.
2️⃣ Mix the Meatloaf
In a large bowl, mix ground beef, soaked breadcrumbs, egg, onion, garlic, mushrooms, Worcestershire sauce, Dijon mustard, salt, and pepper. Mix until just combined—do not overmix.
3️⃣ Shape & Bake
Form mixture into a loaf in a baking dish (about 2″ tall x 5″ wide). Bake at 350°F (175°C) for 40 minutes or until internal temp hits 155°F (68°C).
4️⃣ Cook Bacon & Mushrooms
While baking, cook bacon in a skillet until crispy. Remove and crumble. In bacon drippings, sauté extra mushrooms until golden, about 5 minutes.
5️⃣ Add the Cheese
Top baked meatloaf with overlapping slices of Swiss cheese.
6️⃣ Top & Finish
Spoon mushrooms over cheese, then sprinkle crumbled bacon on top. Return to oven for 10 minutes, until cheese is melted and bubbly.
7️⃣ Rest & Serve
Let rest for 10 minutes before slicing. Garnish with parsley or thyme, if desired.
