Ingredients:

Main Ingredients:

1 lb (450g) smoked sausage (or andouille), sliced into rounds

2 cups cooked rice (white or brown)

2 cans (15 oz each) black beans, drained and rinsed

1 medium onion, diced

1 red bell pepper, diced

2 cloves garlic, minced

2 tbsp olive oil or butter

Seasonings & Extras:

1 tsp paprika

1 tsp cumin

1/2 tsp chili powder (optional for heat)

Salt & black pepper to taste

1/2 cup chicken or vegetable broth (to keep everything moist)

Fresh parsley or cilantro, chopped, for garnish

For Serving:

Lime wedges

Hot sauce (optional)

Instructions:

1. Cook the sausage:
In a large skillet or pan, heat olive oil over medium heat. Add sliced sausage and cook until browned and slightly crispy, about 5–6 minutes. Remove from the pan and set aside.

2. Sauté the veggies:
In the same pan, add onion, bell pepper, and garlic. Cook for 3–4 minutes until softened and fragrant.

3. Add beans & seasonings:
Stir in black beans, paprika, cumin, chili powder, salt, and pepper. Pour in the broth and simmer for 5 minutes to let the flavors meld together.

4. Stir in the rice:
Add the cooked rice and sausage back into the pan. Mix well until everything is combined and heated through. Taste and adjust seasoning if needed.

5. Garnish & serve:
Sprinkle with fresh parsley or cilantro, squeeze lime juice over the top, and serve with hot sauce if you like an extra kick.
