⏱️ Prep Time: 20 minutes | Cook Time: 15 minutes
🍽️ Servings: 4 big burritos
Ingredients:
For the Beef Filling:
1 lb ground beef
1 packet taco seasoning (or 2 tbsp homemade mix)
½ cup water
For the Burrito Base:
4 large flour tortillas (burrito size)
1 cup cooked seasoned rice (Mexican or cilantro lime rice works great)
½ cup nacho cheese sauce (store-bought or homemade)
½ cup sour cream
1 cup shredded lettuce
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
1 cup Fritos (or crunchy tortilla strips)
For the Grilled Cheese Topping:
1½ cups shredded Mexican blend cheese
2 tbsp butter (softened)
Instructions:
1. Cook the beef:
In a skillet over medium heat, brown the ground beef until no pink remains. Drain excess grease. Stir in taco seasoning and water, simmering until thickened (about 5 minutes). Set aside.
2. Warm the tortillas:
Heat tortillas in a dry skillet for 30 seconds on each side or wrap in foil and warm in the oven. This makes them pliable and easier to roll.
3. Build the burrito:
Lay a tortilla flat and layer in this order: seasoned rice, taco beef, nacho cheese sauce, sour cream, shredded lettuce, cheddar cheese, mozzarella cheese, and a handful of crunchy Fritos.
4. Wrap it tight:
Fold in the sides of the tortilla, then roll it up tightly from the bottom to form a burrito. Repeat with remaining tortillas.
5. Add the grilled cheese topping:
Spread softened butter lightly on one side of the burrito. Sprinkle a generous amount of shredded Mexican blend cheese on a skillet over medium heat, then place the burrito seam-side down on the melted cheese. Cook until golden and crispy, about 2–3 minutes. Flip and repeat on the other side.
6. Serve & enjoy:
Cut in half for that gooey, cheesy reveal and serve with extra nacho cheese sauce, salsa, or guacamole on the side. 🌯✨
Tips & Variations:
✅ Swap beef for shredded chicken or ground turkey.
✅ Add jalapeños for a spicy twist.
✅ Use chipotle ranch instead of sour cream for smoky heat.
✅ Make it vegetarian by swapping the meat with beans or grilled veggies.
