14 oz (400g) smoked sausage or kielbasa, sliced into rounds
2 tablespoons olive oil
1 teaspoon smoked paprika
½ teaspoon garlic powder
Salt & pepper, to taste
For the Honey Garlic Glaze:
⅓ cup honey
3 cloves garlic, minced
2 tablespoons soy sauce
1 tablespoon apple cider vinegar (or lemon juice)
1 tablespoon butter
For Garnish:
Fresh parsley, chopped
Red pepper flakes (optional, for heat)
Instructions:
1. Roast the sweet potatoes:
Preheat your oven to 400°F (200°C). Spread cubed sweet potatoes on a baking sheet. Drizzle with olive oil, then season with smoked paprika, garlic powder, salt, and pepper. Toss to coat evenly. Roast for 20–25 minutes, flipping halfway, until tender and lightly caramelized.
2. Cook the sausage:
While the sweet potatoes roast, heat a large skillet over medium-high heat. Add sausage slices and cook until browned and slightly crisp on both sides, about 5–6 minutes. Remove from skillet and set aside.
3. Make the honey garlic glaze:
In the same skillet, reduce heat to medium. Add butter and minced garlic, sautéing until fragrant (about 1 minute). Stir in honey, soy sauce, and apple cider vinegar. Let it bubble and thicken slightly for 2–3 minutes.
4. Combine & coat:
Return the sausage to the skillet, tossing to coat in the glaze. Add the roasted sweet potatoes and gently stir until everything is glossy and covered in that sticky honey garlic sauce.
