Ingredients:
For the Chicken Filling:
1 lb (450g) cooked chicken breast, shredded or diced
2 cups shredded cabbage (green or purple, or a mix)
1 cup shredded carrots
1 red bell pepper, thinly sliced
Β½ cucumber, julienned
2 green onions, sliced
Fresh cilantro, chopped (to taste)
For the Peanut Sauce:
Β½ cup creamy peanut butter
2 tbsp soy sauce (or tamari for gluten-free)
1 tbsp rice vinegar
1 tbsp honey or maple syrup
2 tsp sesame oil
1 tsp sriracha or chili garlic sauce (optional for spice)
2β3 tbsp warm water (to thin the sauce as needed)
For the Wraps:
6β8 large flour tortillas or whole wheat wraps
Optional toppings: crushed peanuts, sesame seeds, lime wedges
Instructions:
1. Make the peanut sauce:
In a medium bowl, whisk together peanut butter, soy sauce, rice vinegar, honey, sesame oil, and sriracha until smooth. Add warm water, 1 tablespoon at a time, until the sauce reaches a pourable consistency. Taste and adjust seasoning (more honey for sweetness, more soy for saltiness, more sriracha for heat).
2. Prep the veggies & chicken:
In a large mixing bowl, combine shredded chicken, cabbage, carrots, bell pepper, cucumber, green onions, and cilantro. Toss well to mix.
3. Add the sauce:
Pour half of the peanut sauce over the chicken-vegetable mixture and toss until everything is evenly coated. Reserve the rest of the sauce for drizzling or dipping.
4. Assemble the wraps:
Lay a tortilla flat and spoon a generous portion of the chicken-vegetable mixture into the center. Drizzle with extra peanut sauce, sprinkle with crushed peanuts or sesame seeds, then fold in the sides and roll up tightly.
