Ingredients:

For the Taco Meat:

1 lb (450g) ground beef (or turkey/chicken)

1 small onion, diced

2 cloves garlic, minced

1 packet taco seasoning (or 2 tbsp homemade mix)

1/4 cup water

For the Rice Base:

2 cups cooked white or brown rice (or use cilantro-lime rice for a zesty kick)

For the Toppings:

1 cup black beans, drained and rinsed

1 cup corn kernels (fresh, canned, or frozen)

1 cup shredded lettuce

1 cup diced tomatoes

1/2 cup shredded cheddar or Mexican blend cheese

1 avocado, sliced or diced

1/4 cup sour cream or Greek yogurt

Fresh cilantro, chopped

Lime wedges for serving

Instructions:

1. Cook the rice:
Prepare rice according to package instructions. For extra flavor, squeeze in fresh lime juice and stir in a handful of chopped cilantro before serving.

2. Make the taco beef:
In a large skillet over medium heat, cook ground beef until browned, breaking it apart with a spoon. Drain any excess fat. Add diced onion and garlic, cooking until fragrant. Stir in taco seasoning and 1/4 cup water, then simmer for 5 minutes until the mixture thickens.

3. Assemble your bowl:
Spoon a generous portion of rice into each bowl. Top with a hearty scoop of taco beef.

4. Add the toppings:
Layer on black beans, corn, shredded lettuce, diced tomatoes, cheese, avocado, and a dollop of sour cream.
