Ingredients:

For the Bread:

2 cups all-purpose flour

1 ½ tsp baking powder

½ tsp baking soda

½ tsp salt

½ cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 tsp vanilla extract

½ cup sour cream (or Greek yogurt for extra moisture)

1 ½ cups fresh peaches, peeled and chopped (can substitute canned or frozen, drained well)

Optional Topping:

2 tbsp brown sugar

½ tsp cinnamon

¼ cup chopped pecans or walnuts

Instructions:

1. Prepare the oven:
Preheat your oven to 350°F (175°C). Grease and lightly flour a 9×5-inch loaf pan, or line with parchment paper for easy removal.

2. Mix dry ingredients:
In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.

3. Cream butter & sugar:
In a large mixing bowl, beat softened butter and granulated sugar together until light and fluffy, about 2–3 minutes. Add eggs one at a time, beating well after each addition. Mix in vanilla extract.

4. Add sour cream:
Blend in the sour cream (or Greek yogurt) until smooth and creamy. This keeps the bread moist and tender.

5. Fold in peaches:
Gradually stir in the dry ingredients until just combined. Gently fold in the chopped peaches, being careful not to overmix.

6. Add topping (optional):
In a small bowl, mix brown sugar, cinnamon, and nuts. Sprinkle evenly over the top of the batter for a sweet, crunchy finish.

7. Bake the bread:
Pour batter into the prepared loaf pan and bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean. Cover loosely with foil halfway if the top browns too quickly.

8. Cool & serve:
Let bread cool in the pan for 10 minutes, then transfer to a wire rack. Slice and serve warm or at room temperature.
