🔥 Instructions
1. Preheat the Grill
Heat your grill to medium-high and lightly oil the grates.
2. Make the Fries
Peel and cut potatoes into thin strips.
Rinse in cold water to remove starch, then pat dry thoroughly.
Toss in olive oil, salt, and pepper.
Spread on a baking sheet in a single layer and bake at 425°F (220°C) for 25–30 minutes, flipping halfway through until golden and crispy.
3. Prepare the Fish
In a shallow bowl, mix flour with garlic powder, paprika, salt, and pepper.
Pat fish fillets dry and dredge them in the seasoned flour mixture.
Lightly drizzle olive oil on grill grates. Place the fillets on the grill.
Grill for 4–5 minutes per side, until golden, cooked through, and flaky.
4. Serve
Plate grilled fish next to the hot fries.
Squeeze lemon juice over the fish and sprinkle with chopped parsley.
Serve with extra lemon wedges on the side.
💡 Tips
For extra crisp on the fries, soak the potato slices in water for 30 minutes, then dry thoroughly.
Add a spicy kick to the flour mixture with a pinch of cayenne or chili powder.
Serve with tartar sauce, aioli, or ketchup for dipping.
