Ingredients

4 large russet potatoes, cut into ½-inch fries
2 tbsp vegetable oil
1 tsp salt

2 large yellow onions, thinly sliced
2 tbsp butter
1 tbsp olive oil
1 tsp sugar
1 tsp balsamic vinegar
¼ tsp salt
For the Ribeye:
2 ribeye steaks (1–1½ inches thick)
1 tbsp olive oil
1 tsp coarse salt
½ tsp black pepper
2 sprigs fresh thyme (optional)
2 cloves garlic, crushed
For Garnish:
Chopped parsley
Flaky sea salt

Step-by-Step Instructions
1. Bake the Fries
Preheat oven to 400°F (200°C).
Soak potato sticks in cold water for 30 mins, then pat dry.
Toss with oil, salt, and paprika. Spread on a parchment-lined tray.
Bake 25-30 mins, flipping halfway, until crispy.
2. Caramelize the Onions
Heat butter and oil in a skillet over medium-low heat.
Add onions, sugar, and salt. Cook 20-25 mins, stirring occasionally, until deep golden.
Stir in balsamic vinegar and cook 2 more mins. Set aside.
3. Cook the Steak
Pat steaks dry and season generously with salt and pepper.
Heat a cast-iron skillet over high heat until smoking. Add oil.
Sear steaks 3-4 mins per side for medium-rare (add thyme and garlic in the last 2 mins).
Rest 5-10 mins before slicing.
4. Serve
Slice steak against the grain. Top with onions and flaky salt.
Plate with fries and garnish with parsley.
