
Fajita Chicken Casserole
A cheesy, sizzling Tex-Mex dish loaded with tender chicken, colorful peppers, and bold fajita flavor—all baked to bubbly perfection in under 30 minutes!

🛒 Ingredients
2 cups cooked chicken breast, shredded or diced
1 tbsp olive oil
1 red bell pepper, sliced
1 green bell pepper, sliced
1 yellow bell pepper, sliced
1 small red onion, sliced
1 packet fajita seasoning
or:
1 tsp chili powder
1 tsp cumin
½ tsp paprika
½ tsp garlic powder
Salt & pepper, to taste
1 can (10 oz) diced tomatoes with green chilies, drained
1 cup sour cream or Greek yogurt
1½ cups shredded cheddar or Mexican blend cheese
1 cup shredded mozzarella cheese
Optional Toppings:
Chopped cilantro, green onions, jalapeños, avocado
👩🍳 Instructions
1️⃣ Preheat Oven
Preheat oven to 375°F (190°C).
2️⃣ Sauté Veggies
In a large skillet, heat olive oil over medium heat. Add bell peppers and onion, and sauté 5–7 minutes until softened. Sprinkle with half the fajita seasoning.
3️⃣ Mix Casserole Base
In a large bowl, combine:
Cooked chicken
Sautéed veggies
Drained tomatoes
Sour cream
Remaining fajita seasoning
1 cup cheddar/Mexican blend cheese
4️⃣ Assemble
Transfer to a greased 9×13-inch baking dish.
Top with mozzarella and remaining cheddar.
5️⃣ Bake
Bake uncovered for 20–25 minutes, until hot and bubbly.
6️⃣ Garnish & Serve
Let cool slightly. Garnish with desired toppings. Serve on its own or with rice, tortillas, or salad.
