Ingredients:
For the Pancake Base:
2 cups all-purpose flour
2 tbsp sugar
1 tbsp baking powder
½ tsp baking soda
½ tsp salt
2 eggs
1 ¾ cups buttermilk
¼ cup unsalted butter, melted
1 tsp vanilla extract

1 lb breakfast sausage (pork or turkey), crumbled

5 large eggs
1 cup whole milk
½ cup heavy cream
2 tbsp maple syrup
½ tsp cinnamon

Instructions:
1. Make the Pancakes:
In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt. In another bowl, mix eggs, buttermilk, melted butter, and vanilla. Pour the wet ingredients into the dry and stir until just combined—don’t overmix.
Heat a griddle or nonstick skillet over medium heat and lightly grease. Pour batter onto the surface and cook pancakes for about 2 minutes per side, or until golden brown. Let cool slightly, then cut into quarters or strips.
2. Cook the Sausage:

3. Prepare the Custard:
In a medium mixing bowl, whisk together the eggs, milk, cream, maple syrup, cinnamon, and a pinch of salt until smooth and well combined.
